Two simple recipes great for Mom’s special day. So easy even the kids can help.

Ham, Egg and Cheese Bakes

10 slices deli thin sliced ham
3 slices American cheese
5-6 Eggs
2 tbsp of oil
2 tbsp of milk or cream
I can croissant dough
Egg wash

  1. Pre heat oven to 375°
  2. In a large bowl scramble eggs and milk. Cook eggs on a low heat until almost cooked.
  3. While eggs are cooking spread ½ of the dough to a rectangle on a cookie sheet lined with parchment paper. Layer ham on croissant then layer with cooked eggs. Then layer with cheese top with remaining half of dough. Pinch edges until sealed. Brush lightly with egg wash and poke with fork (about 4 times).
  4. Cook in 375° oven for 15 minutes or until golden brown.
  5. Let cool for 5 minutes, use pizza cutter or knife to slice into squares. Enjoy.

Spinach and Goat Cheese Fritatta

5-6 Eggs
2 tbsp of milk or cream
2 Cups of ham(diced)
1 ½ cup Yellow onion (diced)
2 tbsp of olive oil
1 Cup baby spinach (julienned)
½ Cup goat cheese (crumbled)

  1. Pre heat oven to 375°
  2. In a skillet, sauté onions and ham in oil until onions are translucent.
  3. Scramble eggs and milk with whisk.
  4. Spray a pie pan with non-stick cooking spray. Pour ham mixture into pie pan and top with spinach. Pour eggs over mixture in pie pan. Crumble cheese over egg mixture.
  5. Bake in 375° oven for 30 minutes.
  6. Slice and enjoy.
